Salmon and Red Cabbage & Beetroot with Feta Cheese

What you need

Ingredients

  • 1 pack of Mash Direct Red Cabbage & Beetroot
  • 1 Salmon fillet
  • Chilli Flakes
  • Feta Cheese
  • Limes

Recipe method

Season the salmon. Heat 2 tbsp of oil in a nonstick frying pan over a high heat.

When hot add the salmon, skin-side down, and cook for 3 mins. Flip over, turn the heat down and cook for a further 4-5 mins.

Whilst the salmon is cooking – cook the Mash Direct Red Cabbage & Beetroot as per package instructions.

Chop the Feta into small cubes.

When the salmon is cooked, plate on top of a bed of Red Cabbage & Beetroot. Sprinkle with chilli flakes and feta cheese. Serve with a lime wedge. Season with Black Pepper too.
