Christmas - One-Pan Salmon

Make life easy with this healthy no-fuss dinner!

What you need

Ingredients:

  • Mash Direct Roast Potatoes
  • 2 Salmon fillets
  • 8 pieces of tender-stem broccoli
  • 2 handfuls of cherry tomatoes
  • 1 handful of basil leaves
  • 2 tbsp Olive oil
  • 3 tbsp Balsamic vinegar

Recipe method

Preheat oven to 200°C.

Add Mash Direct Roast Potatoes into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown.

Toss the Tender-Stem Broccoli in with the potatoes, then return to the oven for 15 mins.

Throw in the cherry tomatoes, Balsamic Vinegar and Olive Oil into the dish. Then nestle the salmon amongst the vegetables. Return to the oven for a final 10-15 mins until the salmon is cooked and vegetables have softened.

Serve straight from dish and enjoy!
