Rosti Brunch Stack

What you need

Ingredients:

  • 1 pack of Mash Direct Potato Rosti
  • Bacon
  • 2 Poached Egg
  • Roasted Tomatoes
  • 1 ripe avocado, peeled and de-stoned
  • 1 pinch dried chilli flakes
  • ½ lime, juice only
  • sea salt
  • few sprigs fresh coriander, chopped

Recipe method

Cook the Mash Direct Potato Rosti according to the instructions on pack.

Whilst the Rosti are cooking, grill the bacon.

Poach the egg - Fill a small pan just over one third full with cold water and bring it to the boil. Add the vinegar and turn down to simmer. Crack the eggs one at a time into a small bowl and gently tip into the simmering water. Lightly poach for 2-3 minutes. Remove with a slotted spoon and drain on kitchen towels.

Place the avocado in a bowl and add the chilli flakes, lime juice, salt and a drizzle of extra virgin olive oil. Mash with a fork to the desired consistency. It can be as chunky or smooth as you like.

Serve immediately – layer the egg, bacon and avocado on the Rosti. Garnish with fresh coriander and roasted tomatoes.
