Baked Salmon with Hollandaise Sauce

Swap out the fish for tofu or halloumi for a vegetarian option!

What you need

Ingredients:

  • 1 packet of Mash Direct Colcannon
  • 1 packet of Mash Direct Broccoli with a Cheese Sauce
  • 1 packet of Mash Direct Carrot & Parsnip
  • 2x Salmon fillets
  • Lemon wedge
  • Butter
  • For the sauce:
  • 2 egg yolks
  • 50g butter
  • Salt & Pepper

Recipe method

Preheat the oven to 180°C.

Place the Salmon fillets on a baking tray with lemon and butter on top.
Bake in the oven for 15 minutes.

While the Salmon is baking, create the Hollandaise Sauce and cook the Mash Direct vegetables according to packet instructions.

Get a saucepan and a heatproof mixing bowl that will sit stably over the pan. Half-fill the pan with water and bring to a simmer. Turn down the heat as low as it can go but still have the water simmering.

Whisk the egg yolks. Gradually add the butter in cubes, over a low heat.

Season with salt & pepper, tasting the sauce until the flavour is to your liking. Continue to whisk until the mixture thickens.

Once finished, plate up the vegetables, salmon and sauce, and serve immediately.
