Loaded Sweet Potato Fries

What you need


  • 1 pack of Mash Direct Sweet Potato Fries
  • 1 garlic clove
  • 50g rocket
  • 5g chives
  • 90g of mayonnaise
  • 400g of kidney beans
  • 120g cherry tomatoes
  • 160g baby button mushrooms
  • 20g of onion
  • Pepper (whatever colour you like!)
  • 2 tsp smoked paprika
  • 5g red chili pepper
  • 20g chipotle paste
  • Olive Oil

Recipe method


Cook the Mash Direct Sweet Potato Fries in the oven as per packet instructions.

For the creamy chive mayo, chop the chives and garlic clove finely and add to bowl. Add the mayonnaise to the bowl with a splash of water and mix.

Next up is the chipotle dressing! Add the chipotle paste to a bowl with 2 tbsp olive oil and mix it up. Set to the side for later.

Proceed to slice the button mushrooms finely, add to a bowl with the smoked paprika and olive oil - mix together until the mushrooms are fully coated in the paprika.

Drain and rinse the black beans. Chop the cherry tomatoes into quarters.

Heat a large pan with a drizzle of vegetable oil over a medium-high heat. Once hot, add the mushrooms to the pan and season with a pinch of salt and pepper. Cook for 5-6 min.

Once the mushrooms are slightly crispy, add the chopped cherry tomatoes and black beans to the pan and cook for 2-3 min.

Arrange the Sweet Potato Wedges on plates then load up with the mushrooms, onions, tomatoes and black beans. Complete the dish with a drizzle of your homemade chive mayo and chipotle dressing.

Garnish with the rocket leaves. Enjoy!
