What you need

Ingredients

  • 100g onions(diced)
  • 2 tbsp vegetable oil
  • 50g celery (chopped)
  • 1 clove of garlic (grated)
  • 200g carrot & parsnip (mash direct)
  • 20g tomato paste
  • 70g red lentils(washed)
  • 1 litre of vegetable stock
  • Pinch caster sugar
  • Salt & pepper

Recipe method

- In a pot add oil, onions, celery, and cook for ten minutes until soft.
- Add Carrot & parsnip, tomato paste & lentils. Now add stock bring to boil.
- Simmer for 30 minutes, add sugar & season blend well with soup hand blender.
