Thanksgiving Potato & Bacon Soup

What you need

Ingredients

  • 2 packs of 400g Mash Direct Mashed Potatoes
  • 1/2 large onion, diced
  • 1 garlic clove, chopped
  • 2 tablespoons butter
  • 16g flour
  • 1 litres of chicken stock
  • 90ml double cream
  • 25ml sour cream
  • Handful of grated cheddar
  • For the topping
  • 3 Slices of thick cut bacon, diced
  • Diced or fresh chives

Recipe method

• Cook Mash Direct Mash Potato per packet instructions
• Using a non-stick pot, or a little oil, cook the bacon over a low heat, stirring occasionally. Remove and set aside once crisp.
• Using the same pot add the diced onion and cook until softened (about 5 minutes).
• Add the garlic and butter and cook for another minute.
• Whisk in the flour, using a silicone spatula to stop it from sticking. Cook for a full minute to remove the flour taste.
• Pour in the chicken stock and stir thoroughly. Continue to use the silicone spatula to make sure nothing sticks.
• Slowly add the double cream and bring to a boil before reducing to a simmer.
• Add the cooked Mash to the pot, then mix in the sour cream and season with black pepper.
• Remove from the heat and blend for a creamy and smooth consistency.
• Sprinkle with grated cheese and stir until thoroughly combined and melted.
• Garnish with chives and bacon, serve and enjoy!
