Brussels Sprouts Soup

Creamy Brussels Sprout and Bacon Soup – You’ll either love it or you’ll hate it!

What you need

Ingredients:

  • 1x packet of Mash Direct Brussels Sprouts with Bacon
  • Olive oil for drizzling
  • Salt and Pepper for seasoning
  • 1 pack of Bacon lardons (350-400g)
  • 2 large shallots, chopped
  • 700ml of chicken stock
  • 125ml cream or half and half
  • 130g grated medium cheddar cheese
  • 35g grated Parmesan cheese

Recipe method

Cook Brussels Sprouts with Bacon as per packet instructions.

Cook the bacon lardons in a large soup pot, until crispy. Remove the bacon with a slotted spoon and set on paper towels to drain.

Leave about 3 tbsp of bacon fat in the pan and add the shallots. Saute them for about 5 minutes, until soft. Don’t let them brown.

Add the chicken stock and sprouts to the pan, bring up to simmer. Cook gently for about 5 minutes.

Working in batches, puree the soup. Return to the pot.

Add the cream and reheat to a simmer. Season with salt and pepper, add cheese and stir until melted.

Serve immediately with a good helping of crispy bacon in the centre.
