Loaded Curry Chips with Seared Steak

BBQ Cowboy Sharing Steak

What you need

Ingredients:

  • Mash Direct Curry Chips
  • 12oz sirloin steak or steak of your choice
  • 1 onion, sliced
  • 1 green pepper, sliced
  • 100g mozzarella cheese, grated
  • 100g cup cheddar cheese, grated
  • 2 spring onions, sliced
  • Pickled jalapeños to dress
  • Cherry tomatoes
  • Curry Mayo:
  • 120g of mayonnaise
  • 3 tsp curry powder
  • 2 tsp lemon juice

Recipe method

Cook the Mash Direct Curry Chips according to package instructions.

Season the steak with salt and pepper and sear until internal temperature hits 54°C. Don't overcook the steak or it will be tough! Remove to a plate and set aside to rest.

In a pan add a tablespoon of olive oil and saute the sliced onions and green pepper over a medium heat for about 4 minutes. Remove to a plate and set aside.

When Curry Chips are cooked, spread them on a large cast iron pan or a sheet pan, top with half of the cheese mixture, then top with steak strips, green peppers and onions and add the remaining cheese.

Return to the BBQ for 2-3 minutes until the cheese has melted. Watch closely not to burn. Sprinkle with sliced green onions, some jalapeños and serve.

To make the curry mayo, mix the mayonnaise, curry powder and lemon juice together and serve alongside the Loaded Curry Chips.
Alternatively, you can serve with Mash Direct Coronation Coleslaw.
