BBQ Spatchcock Chicken with Chilli Baby Bakes

What you need

Ingredients:

  • Mash Direct Chilli Baby Bakes
  • Mash Direct Home Style Potato Salad
  • Mash Direct Home Style Coleslaw
  • 1 whole Chicken
  • Olive Oil
  • ¼ cup paprika
  • 1 tbsp brown sugar
  • 1 tbsp cayenne
  • 2 tbsp ground black pepper
  • 3 tbsp garlic powder
  • 1 ½ tbsp onion powder
  • 3 tbsp Maldron flakes
  • 1 tbsp dried oregano
  • 1 ½ tbsp dried thyme

Recipe method

Set the BBQ up for Indirect Cooking.

Remove the backbone of the chicken, before turning over and pressing down to spatchcock.

Rub chicken all over with olive oil before sprinkling with the freshly made rub remembering to include the underside.

Place the chickens, skin side up on the indirect side of the BBQ.

Cook until reaching an internal temperature of 75c in the thickest part of the bird.

While the chicken is cooking, places the Chilli Baby Bakes into a foil tray and cook on the BBQ for 30 - 35 minutes, until crisp.

Slice the chicken and serve with Mash Direct Home Style Coleslaw & Potato Salad.
