What you need

Ingredients

  • 1 pack of Mash Direct Carrot & Parsnip Fries
  • 1 pack of Mash Direct Beer Battered Chips
  • 1 onion
  • Garlic
  • Chorizo
  • Chilli
  • 2 eggs
  • Olive oil

Recipe method

Cook the Mash Direct Carrot & Parsnip Fries and Beer Battered Chips as per instructions on pack.

Preheat the oven to 180 ºC (if using skillet).

Proceed to dice the onion and garlic, fry gently in pan until soft over a medium heat for 2-3 minutes.

Add chorizo & chilli to pan & fry gently for further 2 mins

Dice the Carrot & Parsnip Fries and Beer Battered Chips, add to the pan - cook for 7-8 mins until browned

Crack the eggs on top of potatoes (anywhere in the pan!)

If using skillet, transfer to oven and bake for 6-8 mins until egg white is set (not clear).

If using pan, cover with lid until egg white is set (not clear).

Season as required – serve with side of sourdough for the perfect crowd pleasing brunch!
