St. Patrick’s Day Champ Cups

What you need

Ingredients

  • 1 pack of Mash Direct Champ
  • 3 large eggs, beaten
  • 130g cheddar cheese, shredded
  • 35g bacon bits
  • 35g chives, chopped
  • 35g cheese
  • Salt
  • Pepper

Recipe method

Cook the Mash Direct Champ as per instructions on pack.

Combine the Champ, eggs, cheddar cheese, bacon bits and chives.

Season with salt and pepper if desired.

Grease a muffin pan and mound a spoonful into each cup and sprinkle with cheese.

Bake for 30-35 minutes at 200°C until golden brown

Allow to cool and serve warm with sour cream and a sprinkling of chive.
