Cook the Mash Direct Potato Rosti as per instructions on pack.
Add the avocados to a bowl with a pinch of sea salt and cracked black pepper. Use a fork to mash the avocados until they are roughly mashed. Add a squeeze of lime and chopped scallions to the mashed avocado and mix.
Chop the garlic finely and add to a pan with olive oil, fry off and proceed to add the chopped red pepper. Cook until softened.
Spread the avocado mix over the Mash Direct Rosti and place chopped cherry tomatoes and cress on top. Add the pepper and garlic mix on this also.
Sprinkle over the top with multi seeds, serve immediately and enjoy!
