Sausage & Croquette Roast

This is sure to be a firm family favourite!

What you need

Ingredients:

  • Mash Direct Potato Croquettes
  • Heck 97% gluten-free sausages (or equivalent)
  • 2 Onions (sliced into wedges)
  • 2 Orange peppers (deseeded and diced)
  • Cherry tomatoes (2 handfuls)
  • 2 Garlic cloves
  • 1 tbsp of chopped fresh thyme leaves
  • 100ml Vegetable stock
  • Salt & Pepper
  • 2 tbsp Olive oil

Recipe method

Preheat the oven to 200ºC / 400ºF.

Place Sausages, Onions, Peppers, Garlic and Cherry Tomatoes in a large roasting tin.

Sprinkle Thyme, Salt and Pepper over the ingredients and coat with Olive Oil. Get your hands in there and mix it all together!

Spread the ingredients out evenly in the roasting tin and ensure the sausages are sitting on top of the vegetables.

Roast for about 30–35 minutes until sausages are golden-brown.

Remove from the oven, turn the sausages over and toss the vegetables in the cooking juices.

Pour in the vegetable stock.

Place the Mash Direct Potato Croquettes in between the sausages within the roasting tin. Ensuring they remain on top of the vegetables and above the vegetable stock.

Return to the oven for 20-25 minutes.

Remove from the oven and serve hot!
