Place a small pan over a low heat and add 1tbsp of olive oil. Add the minced garlic, oregano and chilli flakes and allow to cook for 30 seconds before adding the salt.
Once golden brown, add the red wine and bring to a medium heat and reduce by half. Finally add the tomatoes and bring to a boil before reducing to a simmer until it has formed a thick tomato sauce. The longer the sauce simmers, the richer it will be!
Preheat your oven to 180oC and approximately 40 minutes into the sauce simmering add the potato croquettes to the oven for 20 minutes.
Whilst the croquettes are cooking blitz the crushed garlic cloves, parsley and olive oil in a food processor, and finely grate the parmesan.
To serve place the croquettes on a bed of tomato sauce, and finish with parmesan and a drizzle of garlic and parsley dressing.
