Un-Croquetteable-able Patatas Bravas

So good, they're un-croquette-able

What you need

Ingredients:

  • 1 pack of Mash Direct Potato Croquettes
  • For the Salsa Brava:
  • 2 tbsp olive oil
  • 1 can crushed tomatoes
  • 3 cloves of garlic, minced
  • 1 onion, diced
  • 2 tsp Spanish smoked paprika
  • ¼ tsp cayenne pepper
  • 2 dashes of hot sauce
  • Salt & pepper
  • For the Garlic Aioli:
  • ¼ cup mayonnaise
  • 1 garlic clove, grated or pressed
  • 1 tsp lemon juice

Recipe method

Preheat the oven.

Heat the olive oil in a pan over a medium heat and sauté the onion until soft and golden (about 8 minutes). Add the garlic and stir for 30 seconds, until fragrant. Add the tomatoes, salt, paprika, cayenne pepper and hot sauce, stir to combine and bring to a simmer.

Reduce the heat and allow to simmer on low for about 20 minutes, stirring occasionally. Taste and season as required.

Cook the Potato Croquettes as per packet instructions.

You can leave the sauce chunky, or transfer to a food processor to puree. Allow the sauce to cool a bit before doing this.

Make the Garlic Aioli: add the mayonnaise, lemon juice and garlic to a bowl and stir to combine. Add salt and pepper if desired.

You can keep the sauces on the side, or drizzle salsa brava and garlic aioli over the Potato Croquettes and serve with additional sauce on the side for dipping. Top with fresh chopped parsley for garnish if desired.

We served out Patatas Bravas Croquettes with a side of our Chilli Baby Bakes for an extra kick!
