Spicy Eggs & Potatoes

Treat your Mum to a homemade Brunch this Mother's Day!

What you need

Ingredients:

  • 1 packet of Mash Direct Chilli Baby Bakes
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1 large onion
  • 100g sweetcorn
  • 1 tsp paprika
  • 1 green chilli
  • 2 tins chopped tomatoes
  • 4 medium eggs
  • Salt & pepper to season
  • Coriander and chilli flakes to serve

Recipe method

Slice the Chilli Baby Bakes into quarters/2-3cm chunks. Set the Chilli Baby Bakes on a tray into a preheated oven and cook for 10 - 12 minutes.

Finely chop the onion, green chilli and garlic. For a bit more spice, we included the chilli seeds. However you can remove them to reduce the 'heat' in this dish.

In a large frying pan, gently cook the onion in olive oil until softened. Add the potatoes straight from the oven and continue to cook until the potatoes start to crisp (about 5 minutes).

Add sweetcorn, paprika, garlic and chilli and cook for 3 minutes.

Pour in the tinned tomatoes and simmer for around 10 minutes, or until the potatoes feel tender. Season with salt and pepper.

Make 4 wells in the potato mixture and crack in the eggs (make sure the egg is surrounded by potato mix).

Cook until the egg is cooked but the yolk is soft, sprinkle with fresh coriander and serve from pan.

Serve with fresh bread for a tasty Mother's Day Brunch!
