- Roughly Chop your black olives, parsley and sundried tomatoes then mix them with your goat's cheese.
- Lay a chicken breast on a chopping board and use a sharp knife to make a deep pocket inside the breast. The easiest way is to push the point of a knife into the fat end, and keep going halfway into the fillet. Be careful not to cut all the way through.
- Stuff your feta mix into the pockets of your chicken.
- Heat your rapeseed oil in a hot pan, when oil is sizzling add your chicken breasts and seal on both sides till golden, around 2 -3 minutes on each side.
- Cut your pepper and onion into large chunks and your corn on the cobs in half.
- Place your veg in a roasting dish and toss it in your olive oil, oregano, smoked paprika, lemon juice and a pinch of salt and pepper.
- Add your chicken breasts and sweet potato fries to the tray.
- Place your tray in the oven and bake for 15-20 minutes.
- Chop the ends off the green beans and Chorizo and add into your roasting tray 5 minutes before it's finished cooking.
- Remove from the oven and serve family style in your roasting dish.
