Jenny Bristow's Gourmet Dinner

A simple recipe with little fuss or cooking time for a Gourmet meal!

What you need

Ingredients:

  • 1 packet of Mash Direct Roast Potatoes
  • 1 packet of Mash Direct Red Cabbage & Beetroot
  • 1 small haunch venison (1-2 lbs)
  • Pinch thyme
  • 6-8 juniper berries
  • 2 dsp oil
  • 2 dsp maple syrup

Recipe method

Preheat the oven to 200◦ C, Gas Mark 6. Cook the Roast Potatoes according to packet instructions.

Heat the oil in a heavy based pan. Add the haunch of venison and pan fry for 10 mins.

Add the thyme and juniper berries (crushed) and pour over the maple syrup. Cook for a further 5 - 10 minutes, turning often during cooking.

Place the venison in an oven dish and place in the hot oven for 6-8 mins to finish.

While the venison is in the oven, cook the Red Cabbage & Beetroot, as per packet instructions.

Serve hot, with the venison cut into thick slices, along with the Red Cabbage & Beetroot and Roast Potatoes.
