Carrot, Parsnip & Coconut Soup

A quick and easy soup for every occasion

What you need

Ingredients:

  • 2 packets of Mash Direct Carrot & Parsnip Mash
  • 400 ml can reduced fat coconut milk
  • 700 ml vegetable stock
  • 2 tsp ground cumin
  • 1 heaped tsp grated fresh root ginger
  • Chopped coriander (to garnish)
  • 1 tbsp oil

Recipe method

Heat the oil in a large saucepan. Add the 2 packets of Mash Direct Carrot & Parsnip Mash, and fry for 3 - 5 minutes.

Add a handful of chopped coriander, the cumin and the ginger and mix. Cook for 1 minute.

Add the coconut milk and vegetable stock and bring to the boil. Cover, and simmer for 10 - 12 minutes, until the vegetables are tender.

Purée and season. Serve with fresh crusty bread, and top with chopped coriander.
