BBQ Shrimp with Mango & Lime Salsa and Mash Direct Salads

What you need

Ingredients:

  • Mash Direct Home Style Potato Salad
  • Mash Direct Home Style Coleslaw
  • Shrimp Marinade - 1 hour before BBQ
  • 4 tbsp rapeseed oil
  • 1 tsp sea salt
  • 1 tsp garlic granules
  • ½ tsp freshly ground black pepper
  • ½ tsp cayenne pepper
  • 2 lb large prawns, peeled and deveined
  • Mango & Lime salsa vinaigrette
  • ½ ripe mango, roughly chopped
  • 4 tablespoons rapeseed oil
  • Hand full of fresh coriander
  • 1 spring onion - white end
  • 1 tablespoon fresh lime juice
  • 1 tablespoon rice vinegar
  • 1 piece fresh ginger, ½ inch long, peeled and chopped
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Recipe method

Mix the shrimp marinade, add the shrimp mixing through the marinade. Cover and refrigerate for 30-60mins.

In a blender combine the vinaigrette ingredients. Process for about 1 minute or until the texture is smooth.

Place the Shrimp onto kebab skewers, discarding the remaining marinade.

Grill the shrimp directly over high heat 2mins each side with the lid closed.

Serve with the Mash Direct Salads.
