Potato Rosti Breakfast Stack

What you need


  • 2x Mash Direct Potato Rosti
  • 2 Eggs
  • 500g Cherry tomatoes
  • 2 Avocados
  • 225g Halloumi
  • Juice of 1 lime
  • 1 Red chilli
  • Salt and Pepper
  • Coriander for garnish

Recipe method

Smash avocado, season and add lime juice. Optional to add chopped coriander.

Chop cherry tomatoes, season with salt, pepper, olive oil and place in a preheated oven for 20 minutes

Place potato rostis in the air fryer for 15 minutes.

Cut up the halloumi and pan fry for roughly 5 minutes or until golden brown

Fry eggs for 5 minutes

Plate up and garnish with chopped chilli
