Moroccan Vegetable Sharing Plate

This sharing plate is the perfect centrepiece for your table this New Years. Quick to make and full of flavour!

What you need

Ingredients

  • 2 packs Mash Direct Carrot & Parsnip Fries
  • For the pickled onions
  • 2 tablespoons white balsamic vinegar
  • A pinch of sugar 1 small red onion, thinly sliced into rounds
  • For the beetroot hummus
  • 1 x 400g can chickpeas, drained
  • 90g natural Greek yoghurt
  • 300g steamed beetroot, roughly cut
  • 1 garlic clove, crushed
  • 2 tablespoons tahini
  • 1 teaspoon chopped fresh mint
  • To serve
  • 50g Feta, crumbled
  • 80g bag of baby leaves
  • 1 tablespoon pomegranate seeds
  • A small handful of coriander leaves and mint leaves
  • 4 large flatbreads, warmed

METHOD

• Cook the Mash Direct Carrot & Parsnip Fries according to pack instructions. For the pickled onions

• In a small bowl mix the vinegar and sugar together, add sliced red onion and set aside for 20 minutes then discard the liquid.

For the hummus

• Place the hummus ingredients into a food processor and blend to a smooth paste.

To serve

• Arrange the salad leaves onto a serving dish and top with Mash Direct Carrot & Parsnip Fries.

• Sprinkle crumbled feta and pomegranate seeds and top with coriander and mint leaves. Serve with the beetroot hummus and warmed flatbreads.
