What you need
Mash Direct Potato Cakes
Mash Direct Potato Rosti
2 Gluten-free sausages
4 Bacon rashers
2 Large free-range eggs
Preheat the oven to 190°C.
Place the Mash Direct Potato Cakes and Potato Rostis on a baking tray in the oven for 18 - 20 minutes.
While they heat in the oven, cook the sausages and bacon on a frying pan.
Once cooked, quickly wilt spinach and sliced cherry tomatoes.
Finally poach your eggs to your liking (We love a runny yoke!).
Carefully stack each element on top of each other - start with the Potato Cake at the bottom, slice a sausage in half and place on top, add wilted spinach and sliced cherry tomatoes, place two rashers of bacon on top and balance a Potato Rosti on top.
Finish with a poached egg (cut into yoke for dramatic effect!).
