Creamy Chicken & Cauliflower Filo Pie

A winter warmer for all the family

What you need

Ingredients:

  • 1 pack of Mash Direct Cauliflower Cheese Gratin
  • 2 leeks, washed & sliced
  • 100g butter
  • 100g flour
  • 500ml chicken stock
  • 500ml low fat milk
  • 200g grated cheese
  • 1 whole chicken, cooked and shredded
  • Salt & Pepper
  • 500g frozen peas
  • 4 sheets filo pastry
  • 2 tbsp olive oil

Recipe method

Lightly fry the leeks and set aside.

Make the roux (white sauce) with the butter, flour and milk. Once the mixture has
thickened, add the chicken stock.

Remove from the heat and add the leeks, peas, Cauliflower Cheese Gratin and cooked chicken.

Pour the mixture into a large pie dish. Brush the 4 pieces of filo with olive oil and place over the top of the pie dish, scrunching slightly to look more appealing.
Cook for about 40 minutes.
