• Roughly chop your Mash Direct Roast Potatoes into bite sized chunks.
• Heat a large frying pan and fry your bacon lardons on a high heat until crispy.
• Add your butter to the pan and turn down to a medium heat, do not let the butter burn. Add in your chopped onions and fry for 2 minutes until soft.
• Add your chopped potatoes and crushed garlic to the pan and fry on a medium heat for 10-12 minutes until the potatoes are piping hot, add in your green cabbage and heat through for another 5 minutes.
• While you are frying your cabbage heat your oil on a high heat in a smaller frying pan and crack in your 4 eggs and fry for 4 minutes, so your yolk is still soft.
• Take your cabbage hash off the heat and mix through your cider vinegar and seasoning, top with your fried eggs and a sprinkling of chopped chives and serve.
