Lemon Basa Fillets and Southern Fried Potatoes

What you need

Ingredients

  • 1 pack of Mash Direct Southern Fried Potatoes
  • 1 tub of Mash Direct Coronation Coleslaw
  • 1 pack of Mash Direct Cauliflower Bites
  • 2 basa fish fillets
  • 4 tsp unsalted butter
  • 1/2 tbsp paprika
  • Chopped parsley
  • Pinch of salt
  • 1/8 tsp lemon juice
  • 4 lemon slices
  • Vine tomatoes
  • Salad leaves
  • Rocket leaves
  • Vinaigrette

Recipe method

Method:

Preheat oven to 180°C.

Place Southern Fried Potatoes and Cauliflower Bites on a tray and cook as per packet instructions.

For the fish:

Prepare baking sheet with parchment paper and put basa fish fillets on the baking sheet.

Melt the butter in a small bowl. Add paprika, dried basil, salt and lemon juice.

Spread the marinate on both sides of fish using a cooking brush and marinate for 20 minutes.

Bake the basa fillets for 30 minutes uncovered with lemon slices on top.

For salad:

Place vine tomatoes on an oven tray - proceed to drizzle olive oil over the tomatoes and sprinkle with rock salt. Place under the grill for 15-20 minutes.

Toss baby gem salad and rocket and arrange on plate, place vine tomatoes on top.

Proceed to place basa fish fillets on top of salad and drizzle with vinaigrette or lemon juice.

Serve with Southern Fried Potatoes, Cauliflower Bites and Coronation Coleslaw.

Serve immediately and enjoy!
