Boxing Day Leftover Pie

What better way to use up Christmas Leftovers?

What you need

Ingredients

  • Mash Direct Brussels Sprouts
  • Mash Direct Honey Roasted Parsnips
  • Mash Direct Champ
  • Mash Direct Carrot & Parsnip (optional layer for extra flavour)
  • Leftover turkey and/or ham, roughly chopped
  • White sauce (homemade or bought)
  • 1 tsp mustard (or to taste)
  • Filo pastry sheets
  • Butter (for brushing the filo)

Recipe method

1. Preheat the oven to 180°C (fan 160°C).

2. Make the sauce - In a pan, prepare a simple white sauce and stir in the mustard. Set aside.

3. Prepare the filling - heat up chunks of Mash Direct Honey Roasted Parsnips, Brussels Sprouts, leftover turkey and ham, and Mash Direct Stuffing Bites if using.

4. Assemble the pie - spread a layer of Mash Direct Carrot & Parsnip in the base of an ovenproof dish. Spoon over the warm filling and pour the white sauce on top.

5. Lightly brush each sheet of filo pastry with melted butter, scrunch it up, and place over the filling until the top is completely covered.

6. Pop into the oven for around 20 minutes, or until the filo is crisp and golden.

7. Enjoy warm with a generous helping of Mash Direct Champ for the ultimate post-Christmas comfort meal.
