Mexican Style Crispy Potato Slices

A mexican twist with our Crispy Potato Slices!

What you need

Ingredients

  • 2 packs of Crispy Potato Slices
  • 2 chicken breasts
  • 50g Feta cheese
  • 1 chopped red chilli
  • Handful of coriander
  • 2 tbsp sour cream
  • Jalopenos
  • 1 tsp salt
  • Black pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic granules

Recipe method

Preheat your oven to 180°C.

Place Crispy Potato Slices on a baking tray and cook for 18-20 minutes, turning halfway through.

Season chicken breasts with salt, pepper, paprika, cumin, and garlic granules.

Cook the chicken breasts in a pan with oil until browned on each side. Add chicken stock and BBQ sauce, cover, and simmer for 15 minutes.

Shred the cooked chicken using forks and add extra sauce for more flavour.

Prepare the veggies: chop coriander, avocado, and red chilli.

Once the potato slices are crispy, top with shredded chicken, sour cream, avocado, and your prepared veggies.

Make it a meal.
