The Belfast Gourmet's Stacked Rosti

What you need

Ingredients:

  • 1 pack of Mash Direct Potato Rosti
  • 2 large free range eggs
  • 1 ripe avocado - deseed and slice
  • Optional: smoked bacon medallions
  • To serve:
  • Crushed garlic and chilli

Recipe method

Preheat the oven to 180oC / Gas mark 4 and place a large flat bottomed pan filled with 2 inches of water over a medium heat until a rolling boil is achieved.

Cook the Mash Direct Potato Rosti for 5 minutes. After 5 minutes transfer the Rosti along with the bacon medallions to the grill to finish for 5 minutes.

While the bacon is cooking, transfer your eggs to the pan of water and cook for 2 minutes or until lightly firm and easily lifted with a slotted spoon. Transfer to a paper towel to dry.

To serve: top a Potato Rosti with bacon, sliced avocado, and a poached egg. Finish with the garlic and chilli!
