Festive Brussels Sprout Salad

A festive Brussels Sprout Salad Winter Salad with Feta, Bacon, and Pomegranate

What you need

Ingredients

  • 50g feta cheese
  • A handful of toasted macadamia nuts, chopped
  • ½ red onion, finely sliced
  • 2 rashers of bacon
  • A sprinkle of pomegranate seeds

Recipe method

1. Heat the Brussels Sprouts according to pack instructions – either in the microwave or on the hob.

2. In a dry pan, lightly toast the macadamia nuts until golden.

3. Grill or fry the bacon until crisp.

4. Chop the bacon and toasted nuts into small pieces.

5. Spoon the brussels sprouts onto a serving plate and top with red onion, bacon, and macadamia nuts.

6. Finish with crumbled feta and a sprinkle of pomegranate seeds.

Make it a meal.
