Cabbage Breakfast Hash

Hearty, wholesome and simple

What you need

Ingredients

  • 1x Mash Direct Mashed Potato
  • 1x Mash Direct Green Cabbage
  • 3-4 slices of bacon
  • 1 red onion
  • Handful of cherry tomatoes
  • 2 tbsp balsamic vinegar
  • 2 eggs

Recipe method

1. Heat a little oil in a large frying pan, add the mash or champ with cabbage and fry over a medium heat, pressing it down slightly, until golden and crispy. Turn and cook the other side.

2. In a separate pan, fry the bacon until crisp. Add the red onion and cook until softened and lightly caramelised.

3. Add the cherry tomatoes to a small pan with a splash of balsamic vinegar and cook gently until softened and the balsamic has reduced to a glossy glaze.

4. Fry the eggs to your liking.

5. Serve the crispy cabbage hash topped with the bacon and onion, spoon over the balsamic tomatoes and finish with a fried egg.
