BBQ Pulled Pork Loaded Wedges

Delicious BBQ pulled pork goes perfectly with our crispy Skin-On Wedges!

What you need

Ingredients

  • 2 packs of Mash Direct Skin-On Wedges
  • 500g BBQ pulled-pork (pre-cooked or homemade)
  • Tomato salsa
  • 2 Avocadoes
  • 1 clove of crushed garlic
  • Juice of 1 lime
  • Salt and pepper to taste
  • Mayonnaise
  • Coriander

Recipe method

1. Preheat the oven to 200°C (fan 180°C) / 400°F / Gas Mark 6.

2. Place the Mash Direct Skin-On Wedges on a baking tray (or cook in air-fryer if you have one).

3. Cook in the oven for 20–25 minutes until golden and crispy, turning halfway through.

4. While the wedges cook, heat the BBQ pulled pork according to packet instructions (usually microwave or oven-bake for 5–10 minutes). Ensure it’s piping hot and fork-tender.

Make the Guacamole:

5. Mash the avocados in a bowl until smooth or slightly chunky.

6. Add lime juice, garlic, and season with salt & pepper. Mix thoroughly. Optional to add chilli for extra heat.

Assemble & Serve:

7. Plate up a generous serving of Skin-On Wedges and top with warm BBQ pulled pork. Add spoonfuls of salsa, guacamole, and a drizzle of mayonnaise.

8. Garnish with fresh coriander or spring onions, and serve with lime wedges on the side.
