Sweet Potato Nourish Bowl

A quick and easy lunch idea!

What you need

Ingredients

Mash Direct Sweet Potato Fries
1 bag of salad leaves/preferred salad
Cherry tomatoes
Avocado
1 red onion
100ml apple cider vinegar
1 tsp sugar
2 eggs
Pickled beetroot
Beetroot hummus
Sunflower and pumpkin seeds

Recipe method

Place Mash Direct Sweet Potato Fries in the air fryer and cook for 12–15 minutes, shaking halfway through.

Make a quick pickled red onion by slicing the onion very thinly. In a bowl, combine the onion with sugar and vinegar, mix well, and set aside.

Boil your eggs for 5–7 minutes, depending on how runny or well-cooked you prefer them.

In a bowl, assemble salad leaves with chopped tomatoes, avocado, beetroot, and hummus.

Once the eggs are cooked, place them in a bowl of iced water, then peel once cooled.

Add the eggs and sweet potato fries to the salad bowl and garnish with seeds.

Make it a meal.
