Cod with Champ

Jenny Bristow's modern version of 'Fish & Chips' with the convenience and healthy ethos of Mash Direct.

What you need

Ingredients:

  • 1 packet of Mash Direct Champ, Mashed Potato or Creamy Leek and Potato Mash
  • 200g piece of Cod/Haddock/Whiting
  • 1 lemon
  • 3-5 capers
  • Peppercorns (black or pink)
  • 1 tsp olive oil
  • 1-2 spring onions (chopped)
  • Few sprigs of thyme or parsley

Recipe method

Heat the oil in the pan, add the fillet of fish and cook by almost dry roasting for 2-3 mins. on each side.

Add the capers, juice of ½ lemon, slices of lemon, herbs and finally a sprinkling of crushed peppercorns. This dish should take only 4-5 mins to cook.

Cook the Mash Direct potatoes according to the package instructions for perfect and nutritional results.

Serve on a plate with mash/champ topped with fish and garnished with blackened lemon slices, capers, peppercorns and a little rocket. Enjoy!
