Bubble & Squeak Soup

A quick and easy soup, with plenty of flavour

What you need

Ingredients:

  • 1 packet of Mash Direct Colcannon
  • 1 tbsp olive oil
  • 1 onion, diced
  • 4 rasher streaky bacon, remove rind and cut into small pieces
  • 1.5 litres of chicken stock
  • 25g parmesan cheese
  • Salt & pepper

Recipe method

Heat the oil in a large pan. Add onion and cook for 5 minutes or until softened.

Toss in the chopped bacon & cook for a further 3-4 minutes until it begins to colour.

Add the Mash Direct Colcannon and chicken stock to cover and simmer for another 10 minutes.

Liquidise, or pass through a mouli. Add more stock if required.

Season & sprinkle with Parmesan.
