Tara’s Creamy Carrot and Parsnip
Soup
This soup is a real winner because
it is so flexible. You can either use Mash Direct’s ‘Carrot
and Parsnip’ as the name suggests or ‘Carrot, Parsnip
and Turnip’ from the company’s wide range of convenient,
fresh and healthy mashed options. The ingredients could not be more
straight forward and the instructions are easy to follow.
Make a great soup in no time!
Ingredients (Serves 4-6)
1 - 2 tablespoons of vegetable oil
or 25g/1oz butter
125g/5oz of chopped onions
1 x 380g pack of Mash Direct’s ‘Carrot and Parsnip’
OR ‘Carrot, Parsnip and Turnip’ for an alternative option.
1 ½ pints of stock (Either chicken or vegetable, made from
2 stock cubes and 1 ½ pints of boiling water or if you have
homemade stock then use that instead.)
130ml/ ¼ pint of milk ( Full fat or skimmed - the choice
is yours!)
A pinch of sugar
Salt and pepper to season
Heat or melt the oil/butter in a
saucepan. Add the chopped onions and toss them until they are completely
coated. Cover with a lid and sweat for 5-10 minutes over a gentle
heat or until soft but not coloured. Add the stock to the cooked
onions and bring the mixture to the boil. Next add Mash Direct’s
‘Carrot and Parsnip’ or ‘Carrot, Parsnip and Turnip’
option, stirring all the time. (Do not over cook at this stage or
the vegetables will lose their flavour.) Add a pinch of sugar and
then carefully pour mixture into a blender or food processor, add
the milk and whiz until creamy smooth. Transfer to a saucepan, taste
and add seasoning as necessary then simmer for a few minutes, stirring
occasionally. (Do not boil.)
Serve immediately with or without a swirl of cream and lots of fresh
crusty bread.
N.B If required, thin the soup’s
consistency by adding more stock and/or milk.
Tara’s Creamy Colcannon Soup
Colcannon is one of our best-loved traditional dishes, although
it can be a little time consuming to prepare.
I have made a fantastic discovery - Mash Direct.
They make Colcannon fresh on their farm daily, within a few hours
from harvesting the potatoes and cabbage; it is cooked and mashed,
then packaged, ensuring ‘souperb’ freshness and flavour!
So this means its ultra convenient to use it whatever way you fancy.
There are no artificial additives or preservatives so it’s
ultra healthy too!
Here, using a packet of Mash Direct’s
‘Colcannon’ you can make a delicious healthy soup fast.
