Cauliflower Cheese Soup

A quick and easy soup, with plenty of flavour

What you need

Ingredients:

  • 2 packets of Mash Direct Cauliflower Cheese Gratin
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 garlic clove, finely chopped
  • 1 large potato, diced
  • 500ml prepared chicken stock
  • 50g mature cheddar, grated
  • Seasoning to taste
  • Additional milk to thin soup (if desired)
  • Handful of cooked bacon lardons for topping (if desired)

Recipe method

Heat the oil in a large pot over a medium heat and sweat the garlic, onion and potato until they are translucent, but not brown.

Add the chicken stock, cover and simmer until the potato is tender.

Add the 2 packets of Mash Direct Cauliflower Cheese Gratin and the grated mature cheddar cheese. Cover and simmer for 10 minutes, stirring occasionally.

Remove from the heat and blend until smooth using a hand blender.

Season the soup to taste and thin the consistency with milk if required.

Pour into bowls and serve topped with cooked bacon lardons or parsley if so desired.
